Fox Fitzgerald's Eamon Jones and Aidan Smith have dedicated their entire working lives to premium spirits. Over 30 years of experience and a large network enabled them to start their own brand. With close connections to the whiskey island of Islay, they brought their first Rest & Be Thankful Single Casks to connoisseurs in 2012. These beginnings are followed by seven single casks from independent bottlers. The non-smoky Bruichladdich and the peat-smoky Port Charlotte Islay single malt whiskeys matured for between 12 and 20 years either in the wine hogshead or the classic bourbon barrel .

The Finglassie 2017/2022 bridges the gap between Islay and the small batch bottlings from Rest & Be Thankful. The Lowland Single Malt comes from the InchDairnie Distillery, which opened in 2015 . North of Edinburgh, they burn a fruity, pleasantly floral-grassy raw spirit using innovative methods - also from peat malt under the name Finglassie. In Islay Whiskey Casks and Oloroso Sherry Butts, Rest & Be Thankful creates an exciting whiskey with peat, campfire smoke, sherry orange, dark chocolate and muesli.
